ABOUT US
Welcome to my food blog Let’s Eat! I’m Chef Deb. I am a trained chef with a certificate in Baking and Pastry from the California Culinary Academy in San Francisco, California. I have also acquired knowledge of a variety of cuisines and techniques from taking classes, seminars, and cooking series from smaller cooking schools in and around the Bay Area. Presently, I live in the Pacific Northwest and am the chef-owner of Let’s Eat! Personal Chef Service and Trolleyman’s Underground Bistro. Trolleyman’s is, in fact, an underground bistro and in order to get in you have to know me personally. I’ll talk more about this in future blogs.
From time to time you’ll see articles written by a few of my friends who are also great cooks. You’ll meet Chef Hollis, an outstanding cook who is the executive chef at Master’s Cafe. Chef Hollis loves to “play with her food” so there’s always something interesting and yummy coming from her kitchen. Her
husband Dave K is our wine expert with over 25 years of experience in the wine business. Dave goes to all the tastings and conducts tastings himself at several of the high-end markets in town (Zupan’s and John’s Market, to name a few). So, Dave really knows what he’s talking about. And we’ve got another David, just to get everyone confused. He’s our front-of-the-house, BBQ Babe and Master Mixologist. When Dave K and David are at Trolleyman’s, David just refers to himself as T.O.D. (the other David). At some point, we’ll give him a call-sign so you’ll know who we’re talking about. Not to be missed, is my good friend Karen Maloy who will appear here, too, from time to time. She is the hottest hostess here in town. She throws the BEST parties and all her food just ROCKS! We’re still talking about last Thanksgiving. Wow! It was the best holiday meal EVER! So stick around. You never know who’s going to drop in to share their knowledge, experience, crazy stories, techniques, recipes, tips and gossip.
OUR MISSION
Our mission here ultimately is about returning to eating REAL FOOD in every sense of those words. We’re talking about whole grains, fresh fruits and vegetables, grass fed beef, free range chickens, wild seafood, whole nuts, seeds, and legumes, and chemical free dairy. We want to stay away from foodstuffs that are processed, chemically and biologically altered (you know, that weird stuff developed in petri dishes in some Frankenstein laboratory) and food that is just fast, ugly and disgusting. We aim to keep it clean, safe, whole and healthy. We support farmer’s markets, the slow food movement, the REAL FOOD movement, Organic and small farming, and ranches and dairies that treat their animals humanely and grass feed them. We prefer it local and seasonal. We also enjoy good wines and David’s Apple Martinis.
ABOUT YOU
There’s no point in creating this blog just for our own amusement. We want you to be a part of our kitchen gang. So, we would appreciate your feedback and contributions, encouraging you to leave comments, suggestions, recommendations, tips and so forth. We figure that you wouldn’t be at a food blog if you weren’t interested in food! Just a word of caution…FYI: We expect you to act like adults and not unruly teenagers with rage issues. This isn’t the forum for political speech, your personal problems, or any other garbage that isn’t related to food. As such, we expect you to be polite to us and to each other. Mean people suck. Any one who is rude, obnoxious, nasty, creepy or combative will not be posted. If you leave spam or any other crap we will hunt you down and turn you in. We just want to have fun here so a–holes are not welcome. Enough said.
